Ingredients

  • 420 g Lunter Crème de Tofu
  • 150 g caramel biscuits, crushed
  • 60 g melted coconut oil
  • 30 ml maple syrup
  • 120 ml maple syrup or agave
  • 30 ml lemon juice
  • 1 vanilla, scraped out
  • 10 g cornstarch
  • decorate as desired

Instructions

Preheat oven to 175°C.

Mix crushed biscuits, melted coconut oil, and maple syrup in a bowl.

Press into a greased or parchment-lined 18cm springform pan.

Bake for 8 minutes, then let cool.

Blend Lunter Crème de Tofu, maple syrup, lemon juice, vanilla and cornstarch in a food processor until smooth.

Pour the filling over the crust and bake for 40-45 minutes, until edges are set but center is slightly jiggly.

Cool at room temperature, then refrigerate for at least 4 hours before slicing.
