Ingredients

  • 200 g Lunter Smoked Creamy spread
  • 200 g cherry tomatoes, halved
  • 1 tbsp olive oil
  • ½ tsp balsamic vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp fresh basil, chopped
  • 1 baguette or ciabatta
  • 1 tbsp olive oil
  • 1 garlic clove, halved (for rubbing)

For garnish:

  • fresh basil leaves
  • a drizzle of balsamic glaz

Instructions

In a bowl, mix cherry tomatoes, olive oil, balsamic vinegar, salt, pepper, and basil.

Let it marinate for about 10 minutes.

Preheat the oven to 200°C (fan: 180°C) or heat a grill pan.

Slice the baguette into 1.5 cm thick slices.

Brush both sides with olive oil and toast in the oven or pan for 4–5 minutes per side, until golden brown and crispy.

While still warm, rub each slice with the halved garlic clove for extra flavor.

Spread a layer of smoked cream on each toasted bread slice.

Spoon the cherry tomato topping over the spread.

Garnish with fresh basil leaves and drizzle with balsamic glaze.
