Ingredients
- 1 LUNTER Natural Tofu
- 1 zucchini
- 1 carrot
- 2 tbsp chopped sun-dried tomatoes
- 1 small onion
- 1 tsp baking powder
- 150g all-purpose flour
- olive oil
- ground black pepper
- salt
- herbs of choice

Instructions

Crumble the tofu into a bowl. Add the grated zucchini (squeeze out the excess water), carrot, and chopped sun-dried tomatoes.

Meanwhile, heat olive oil in a pan and sauté the chopped onion until translucent. Add it to the bowl with the tofu and vegetables, and mix well. Season with salt, pepper, and herbs if desired.

Add the baking powder and all-purpose flour, then mix again.

Using a spoon, gradually fill the muffin tin with the mixture. Bake for 20 minutes at 175°C.
