Ingredients
- 760 g LUNTER Quick Creations Bolognese
- 200 g diced tomatoes
- 10 g basil, finely chopped
- salt & black pepper, to taste
- 12-15 lasagne sheets (check if they’re pre-cooked or need boiling)
- 200 g spinach, fresh or frozen (if frozen, thaw and drain)
- 100 g vegan mozzarella cheese (optional, for a cheesy topping)
Instructions
Heat olive oil in a large pan over medium heat. Add the chopped tomatoes, Bolognese and basil. Let the sauce simmer for 5-10 minutes, stirring occasionally. Season with salt and pepper to taste. Set aside.
Cook the lasagne sheets according to the package instructions. Drain and set aside.
Preheat your oven to 180°C (350°F).
In a lasagne dish, spread a thin layer of the tomato sauce on the bottom.
Layer 3-4 lasagne sheets on top of the sauce.
Spread half of the tofu filling over the lasagne sheets, followed by a layer of spinach.
Repeat the layers: tomato sauce, lasagne sheets, tofu filling, and spinach.
Finish with a final layer of lasagne sheets and cover with the remaining tomato sauce.
Sprinkle with vegan mozzarella cheese on top for a cheesy finish.
Cover the lasagne and bake for 25 minutes.
Remove the cover and bake for additional 10-15 minutes to allow the top to become golden and slightly crispy.
Let the lasagne sit for 5-10 minutes before serving.
