Ingredients
Cutlets
- 2 LUNTER Smoked Tofu
- 3 tbsp mustard
- 4 tbsp soy sauce
- 1 tbsp smoked paprika
- salt
- pepper or herbs of your choice
- 115g legume flour (e.g., chickpea flour)/80g wheat gluten.
Batter
- all-purpose flour
- water
- garlic powder
- salt
Coating
- crushed cornflakes/panko/regular breadcrumbs (depending on your preference)

Instructions

First, blend the tofu, mustard, and soy sauce together.

Add salt, paprika, and a mix of herbs and spices. Mix well to combine the flavours.

Add the flour and mix again thoroughly. If needed, add more flour to adjust the texture.

Shape the mixture into patties, then coat them first in the batter and then in breadcrumbs.

Fry in oil until golden brown. For an extra crispy effect, you can also bake them in an air fryer (for 8 minutes) or in the oven (for about 15 minutes).
