Ingredients

Potato Dumplings

  • 300g potatoes (waxy type C)
  • 110g all-purpose flour
  • 110g semi-coarse flour
  • 1 tsp salt
  • water as needed

Tofu "Bryndza"

  • 1 LUNTER Natural Tofu
  • 1 LUNTER Creme de Tofu Natural
  • ½ small onion
  • 3 tbsp nutritional yeast
  • juice from half a lemon
  • 2 tsp salt

Toppings

  • cracklings from LUNTER Smoked Tofu
  • caramelized onion
  • chives/green onions

Instructions

First, prepare the tofu “bryndza.” Cut the tofu into cubes then add chopped onion, Creme de Tofu, juice from half a lemon, salt, and nutritional yeast. This will give the mixture the necessary cheesy flavor. Blend until completely smooth. Taste and add more salt, lemon juice, or nutritional yeast if needed.

Peel the potatoes and either grate them finely or blend them in a countertop blender with a little water. Add the flour, salt, and mix to form a smooth dough. If needed, add more water, depending on how much liquid the potatoes release.

 Drop the dumplings into boiling water using a strainer. Wait until they float to the surface, then let them cook for about 30 more seconds.

Afterward, remove them and place them in a bowl where you can mix them with the tofu “bryndza.”

 If you want to elevate the dumplings, prepare some caramelized onion. Slice 2 large white onions into thin strips and sauté them in a little oil over low heat until they naturally caramelize. This may take up to 25 minutes, but it’s worth the wait.

To make the tofu cracklings, simply cut the LUNTER Smoked tofu into small cubes and either fry them in a pan or drizzle with a bit of oil and bake them in the oven or air fryer.

Finally, sprinkle the dumplings with chives or green onions and serve immediately. Enjoy!
