Ingredients

  • 2 LUNTER Smoked Tofu
  • 1 large onion,
  • 6 cloves garlic,
  • 2 red peppers,
  • 400 ml tomato puree,
  • 40 ml tomato paste,
  • 200 ml vegetable broth,
  • 250g cooked red beans
  • 250g corn
  • 1/2 tsp black pepper
  • 1 tsp chili
  • 2 tsp salt
  • 3 tsp smoked ground paprika
  • 1 tsp sweet ground paprika
  • 1 tsp oregano
  • 1 1/2 tsp cumin (or caraway)
  • 2 tbsp sugar
  • juice of one lime
  • 40g dark chocolate
  • oil

Instructions

Crumble the tofu with your hands.

In a deep pan, sauté the chopped onion. Add the garlic, diced peppers, tomato paste, spices (except oregano), and sauté everything for about a minute.

Add the crumbled tofu to the pan. After about three minutes, pour in the tomato puree and vegetable broth. Cook for 10 minutes.

Add the cooked beans and corn, and cook everything together for another 20 minutes.

Finally, add salt to taste, sugar, oregano, lime juice, and dark chocolate. Serve the chili with rice or nachos. You can top it with a spoonful of plant-based sour cream, spring onions, fresh cilantro, or drizzle with lime juice. Enjoy!
