Ingredients

  • 1 LUNTER Marinated tofu Sweet Chilli
  • 1.5 L vegetable broth
  • 400 g chopped tomatoes
  • 250 g root vegetables (carrot, parsley root, celery)
  • 1 can white beans
  • 1 zucchini
  • 1 onion
  • 50 g peas
  • 2 tablespoons olive oil
  • spices and salt
  • fresh basil

Instructions

Chop the onion finely and sauté it in oil. Add the chopped tomatoes and diced root vegetables.

Pour in the broth and cook for 5 minutes.

Wash the zucchini, chop it with the skin on, and add it to the soup along with the drained beans and peas. Cook for another 5 minutes. Add salt and pepper to taste.

Serve the soup garnished with basil leaves and sliced tofu.
