Ingredients
- 1 LUNTER Marinated tofu Teriyaki
- pita bread
- zucchini
- eggplant
- bell pepper
- parsley
- red onion
- grill seasoning
- olive oil
- salad
- garlic dressing or salsa
Homemade salsa (optional)
- 300g canned crushed tomatoes
- 1 red onion
- 30g fresh basil
- 3 cloves garlic
- salt and pepper to taste
- olive oil

Instructions
Slice the zucchini and eggplant into rounds. Drizzle them with olive oil, sprinkle with grilling seasoning or herbs, and grill on both sides.
Grill the tofu whole. Once it is crisp and golden on every side, grate it using a coarse grater.
Open the pita bread and spread it with dressing or salsa—or both if you prefer.
Add the grated tofu and grilled vegetables to the pita bread. To include some crunch, dice a yellow bell pepper into small cubes and sprinkle it on top.
Slice the red onion into thin strips, chop or tear the parsley, and scatter them over the pita sandwiches.
Serve with a fresh vegetable salad.
